Serving suggestion: delicious with pasta with leeks and tomatoes, as a salad or on a white bread roll.

Whole smoked eel

The eel is farmed in one of our eel farms. Vishandel Klooster BV is part of the Nijvis group. In addition to Vishandel Klooster BV, the Nijvis group also has three eel farms and a glass eel collecting station. Sustainability has been an important driver. That is why the eel has been given the ESF label.
ESF / Eel Stewardship Fund was established to finance activities that contribute to the recovery of eel stocks in European inland waters.
Glass eels are caught and used for reproduction and a portion is used for farming and eventually consumption.
The farmed eel is a soft eel that can be eaten straight from the bone after smoking. It has a buttery smooth and creamy taste. Smoking the eel on beech wood gives it a specific and distinctive flavour. This fish is also rich in vitamin D and Omega 3 fatty acids.

Der Aal wird in einer unserer Aalfarmen aufgezogen. Vishandel Klooster BV ist Teil der Nijvis-Gruppe. Neben Vishandel Klooster BV besitzt die Nijvis-Gruppe auch drei Aalfarmen und eine Sammelstation für Glasaale. Nachhaltigkeit ist dabei ein wichtiger Faktor. Deshalb trägt unser Aal das ESF-Label.
ESF / Eel Stewardship Fund wurde eingerichtet, um Aktivitäten zu finanzieren, die zur Erholung der Aalbestände in europäischen Binnengewässern beitragen.
Glasaale werden gefangen und zur Fortpflanzung verwendet, und ein Teil wird für die Zucht und schließlich für den Verzehr verwendet.
Der Zuchtaal ist ein weicher Aal, der nach dem Räuchern direkt von der Gräte verzehrt werden kann. Er hat einen butterweichen und cremigen Geschmack. Das Räuchern des Aals über Buchenholz verleiht ihm einen besonderen und unverwechselbaren Geschmack. Darüber hinaus ist Aal reich an Vitamin D und Omega-3-Fettsäuren.
